It is an ongoing process which includes store assessments along with microbial testing of product samples and environmental samples to indicate potential risk in each department. Sample collection and store assessments are done by trained professionals. All laboratory results are evaluated by the laboratory director. All the information is compiled into a report rating the effectiveness of the internal quality and safety procedures and provides constructive feedback for ongoing improvement.

Courses include the Certified Food Manager course as well as ongoing courses covering a range of food industry-related topics for continuing education.
